The explanation is simple: money. One booster is cheaper than two boosters, and it has enough thrust for the mission.
The main engine is Soviet RD-180 with 8 degrees of thrust vectoring, which is sufficient for asymmetry compensation.

But what about two smaller boosters? I guess, they would be not much more expensive than one normal booster. And they won't have to lose dV for compensation.
